Wantuo, a traditional buckwheat-based snack popular in northern China, has become a beloved street-side delicacy in Ordos, Inner Mongolia autonomous region's "warm city".
Follow Xiao Hanzhang, a 68-year-old vendor in Juungar Banner, who has been making Wantuo with his wife since 1990. Their recipe, using hand-kneaded buckwheat batter steamed in large pots and served in rough porcelain bowls, carries the taste of home and the nostalgia of generations.
Located at the junction of Shanxi, Shaanxi, and Inner Mongolia, the snack was introduced to Ordos through the historic migration route known as Zou Xikou. Today, there are more than 100 Wantuo shops in Shagedu town alone, with Xiao's shop standing out for its traditional methods and loyal customers.
