Bean noodles are a traditional staple that we can't do without, whether for festivals, welcoming guests, or celebrating birthdays and full-month occasions.

Bean noodles were brought to Ordos by those who migrated from Shanxi and Shaanxi during the "walking west" migration. The making of bean noodles requires carefully selected ingredients and involves complex processes. The techniques have been passed down entirely through master-apprentice lineage, generation after generation.

"I have been making bean noodles for over 20 years, and my products are loved by people near and far."

The process:

The first step is to add an appropriate amount of artemisia seeds, local eggs, and flaxseed oil into pea flour (the main ingredient), and then knead them into dough.

The rolling process is particularly critical. The dusting flour must be made from locally grown millet.

Once rolled, the bean noodle sheet is smooth, translucent, and gives off a mellow aroma.

Next, the sheet goes through traditional knife cutting, resulting in noodles of uniform thickness. The older generation used to call this "a handful of bean noodles."

As thin as paper, the bean noodles need only two minutes of boiling to be fully cooked, releasing their rich fragrance.

A steaming bowl of bean noodles, with their twists and turns, nourishes ordinary days and comforts hearts that long for a better future.
