Amenqi, a village in Hanggin Banner known for its red roosters, offers at least three ways to enjoy this local specialty. Here is a brief introduction.

First, the whole rooster is soaked in a secret marinade for four hours, allowing the sauce to slowly seep into the meat. The marinated chicken takes on a richer flavor, a deeper color, and a mouthwatering aroma. But that's only step one.
Next, the whole bird is wrapped layer by layer – in tin foil, then mud, then in tin foil again – secured with wire, and placed into a homemade oven. Finally, the oven mouth is sealed with mud.
When the roasted chicken arrives at the table, the heavy mud is peeled away and the foil gently torn open. In an instant, the pure aroma of meat fills the room. Every part of the chicken has absorbed the marinade, and the slow roasting brings out layer upon layer of flavor. With each bite, the rich juices are released in your mouth.

A more common preparation is stewing the chicken with potatoes in a pressure cooker. The tender meat and starchy potatoes meld together, creating a fresh, savory flavor. A sprinkle of chopped scallions is all it needs – the goal is to savor the ingredients in their purest form. A bowl of rice, a spoonful of chicken broth, a piece of potato, and some tangy pickled turnips – hearty, savory, and perfect for whetting the appetite.
