Meng Shenghua, a tofu artisan in Hongqinghe town, Ejin Horoo Banner of Ordos city, has been dedicated to passing on his expertise in a unique traditional tofu-making technique for years.
The technique involves several complex and delicate procedures. The first step involves the selection of high protein raw materials such as soybeans and mung beans. Multiple processes then take place to prepare the delicacy, including soaking, grinding, boiling, and seasoning with brine. The shining point of Meng's technique is his expert use of brine in determining the texture and flavor of the tofu.
Thanks to the unyielding efforts of Meng and his fellow tofu artisans, the Hongqinghe town's traditional technique has been included in intangible cultural heritage lists by Ejin Horoo Banner and Ordos in December 2019 and January 2023, respectively.
